In this article, you’ll find two no-bake pie bite recipes that you can roll up in 30 minutes or less.

Pumpkin Pie Bites Recipe

(Quick hack: Reduce prep time by simply buying a store-made pumpkin pie, plop it into a food processor and use an ice cream scoop to form your pie bites. VOILÀ! Just coat them in chocolate to finish.)

Ingredients:

1 ½ cups pumpkin puree

1 cup graham cracker crumbs

¼ cup powdered sugar

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

1 cup white chocolate chips (or milk chocolate, too!)

1 tablespoon vegetable shortening

Graham cracker crumbs or cinnamon sugar (for coating)

Instructions:

  1. In a mixing bowl, combine the pumpkin puree, graham cracker crumbs, powdered sugar, cinnamon, nutmeg, and ginger until thoroughly mixed.
  2. Using an ice cream scoop, roll the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper. Chill in the refrigerator for about 30 minutes.
  3. In a microwave-safe bowl, melt the white chocolate chips and vegetable shortening in 30-second intervals, stirring until smooth.
  4. Using a fork or toothpick, dip each chilled pumpkin pie ball into the melted white (or milk) chocolate, ensuring it’s evenly coated. Allow any excess chocolate to drip off before placing the coated balls back onto the parchment paper.
  5. Before the chocolate sets, sprinkle graham cracker crumbs or cinnamon sugar on top for garnish.
  6. Chill the pumpkin pie balls until the chocolate coating sets, then serve and enjoy!

Ingredients:

1 cup graham cracker crumbs

¼ cup maple syrup

2 tablespoons brown sugar

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

½ cup dark chocolate chips

1 tablespoon coconut oil

Instructions:

  1. In a mixing bowl, combine the chopped pecans, graham cracker crumbs, maple syrup, brown sugar, vanilla extract, and cinnamon until well mixed.

  3. In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  4. Dip each chilled pecan pie ball into the melted chocolate, ensuring even coverage. Place the coated balls back onto the parchment paper.
  5. Allow the chocolate coating to set by chilling the pecan pie balls in the refrigerator.
